This course is intended to enable food professionals to develop plans for HACCP; a prevention based food safety management system in accordance with Codex Alimentarius HACCP Guidelines and local HACCP regulations where exist.

The training meets the applicable HACCP training requirements for Practitioner and HACCP Coordinators under all GFSI Benchmarked Food Safety Schemes e.g., SQF, BRC, IFS, and FSSC 22000.

HACCP or Hazard analysis and critical control points, is a prevention-based food safety management system that was developed in late 1960s. It’s the most effective tool available today for food business operations to avoid food borne illnesses. It’s a systematic preventive approach to food safety from various type of hazards (Physical, Chemical including radiological, Biological) in production processes that can cause the finished product to be unsafe and designs measures to reduce these risks to a safe level. Its preventive in nature and work on the principles of probability of occurrence. Like so, HACCP attempts to avoid hazards rather than attempting to inspect finished products for the effects of those hazards.

HACCP is from farm to fork. Today, the scope of HACCP covers food manufacturing operations, farm, produce and packinghouse operations, food service, food retails establishments, food warehousing and distribution, food products imports and exports, food packaging, animal feed, pet food and other similar operations. Due to its significance, HACCP today is integral part of contemporary food safety management systems e.g., GFSI benchmarked food safety schemes and standards, SQF, BRC, IFS, and FSSC 22000.
